Mackerel is an oily fish with particularly high levels of omega-3 fatty acids. The summer months, when the water of our Atlantic Ocean gets a little warmer, are the optimal fishing time for this species. After being slowly roasted, the perfectly cleaned fillets are selected, packed into the tin by hand, and covered with olive oil. The flavor of the mackerel fillets increases over time as they mature in the tin.
