By far the most popular variety among Spaniards is Arroz Bomba.

The premium "Bomba" rice has a slightly sweet, distinct aroma.
Because Bomba rice is particularly absorbent, it absorbs the flavors of the other ingredients while cooking, making it excellent for stews, risottos, and, of course, paella.

It has the advantage that it does not become mushy even when cooked for longer periods: compared to other rice varieties, Bomba rice has a low starch content, which helps it remain firm and distinct during cooking and makes it highly resistant to overcooking.

Preparation: 3.5 parts broth to 1 part rice. The cooking time should not exceed 18 minutes.
